Simmered Sea Crab in Tom Ka

Ingredients

(serves 3-4 persons)
Lobo Tom Ka Paste 1 packet
Coconut milk 500 cc
Sea crabs, cleaned and chopped 300 g (10.5 oz)
Chopped shrimps 200 g (7 oz)
Chopped red onion 100 g (3.5 oz)
Kaffir lime leaves without the middle stem 3
Chopped green, red and yellow chilli 3
Palm sugar 2 tablespoons
Wet tamarind 2 tablespoons
Fresh vegetables as preferred



Preparation

Sea crabs have a delicious flavour all of their own, but Lobo Tom Ka Paste is created specially to add a creamy taste that harmonises the flavour of coconut milk, galangal root, kaffir lime leaves and heart of lemon grass to complement the delicate taste of the sea crabs.

• Heat coconut milk with Lobo Tom Ka Paste. Bring to the boil. Add sea crabs, chopped shrimps, red onion and kaffir lime leaves. Simmer until boiled.
• Add chilli and flavour with palm sugar and wet tamarind. Simmer until dried. Serve in bowls alongside fresh vegetables of your choice.





Tips

• The dish tastes better with fresh sea crabs. Choose ones which are full and heavy with large arms, clear eyes and stiff abdomen that does not collapse when pressed.
• Do not use high heat as it will cause coconut milk to separate.
• Vegetables should be washed to remove any germs or contaminant.
